The heat ladder

• Cracked Pepper. Not hot, sharp. Black pepper in every bite, and the jerky underneath is tender enough that the pepper does the work.
• Sweet Chili. A sticky-sweet glaze with just enough kick behind it. This is the one to start with if you are not sure.
• Smoky Nashville. Heat that arrives after the smoke. A slower burn than the jalapeno.
• Jalapeno. Straight jalapeno heat, no hiding.
• Fire Popper. The hottest. Bold heat with real depth behind it rather than heat for its own sake.

Try three before you commit to one

The Spicy Sampler is $39 for three 2 oz bags: Jalapeno, Cracked Pepper and Fire Popper. That is the top of the ladder and the sharp one, so it settles the question of how much heat you actually want.

Spicy jerky on a board
